A MacBook will work fine for CS. It really just boils down to preference. Some people really like MacOS and the Apple ecosystem. At the same time you can get a much better specced machine for the same price. It really just boils down to your preference and whether or not you think it’s worth paying a premium for the design and Apple experience.
NO. That's what I don't understand, the talking point is that you have to keep upgrading with Apple, but it's the exact opposite. My studio MacBook Pro is 11 years old, my Mac Pro is 12, and my iPhone SE just died after like 5 years. I do basic audio stuff on a MacBook Pro (Retina, 15-inch, Mid 2015) 16G ram.
16 should be fine for you at this point in your journey. 32 with the M1 Pro would be decent as you said, but due to availability you'd need to wait. If you get hired after the bootcamp any decent employer will buy you an appropriate machine. I have an M1 Pro 16” with 16gb, and I also have an m1 Mac mini with 8gb.

I genuinely think software companies should start looking at the M2 Air as a viable machine for many of their software engineers, instead of blanket-buying or leasing the top spec 14” or 16” MacBook Pros. By far the biggest selling-point of the M2 Air is its size and weight. Portability matters to developers too.
